Ingredients:
- 120g butter (softened)
- 60g brown sugar
- 90g white sugar
- 1 egg and 1 egg white
- 1tbsp vanilla extract
- 130g self-raising flour
- 1tsp bicarbonate of soda
- 200g milk chocolate chunks
- 1 tube of Smarties
How to make it:
- Preheat the oven to 170°C
- Grease and line a flat baking tray, or 10in cake tin if you want a neater ‘Cakie’
- Mix the softened butter and sugar (white and brown) together until creamed, ideally using an electric whisk
- Add the egg, egg white, vanilla extract, and one tablespoon of flour (this stops the mixture curdling)
- Combine the flour and bicarbonate of soda in a separate bowl, then add to the ‘Cakie’ mixture. Stir to combine, then beat until well mixed.
- Empty the mix onto your prepared tray, or into your prepared cake tin. Gently press to spread the mix (it will spread in the oven anyway)
- Bake for 15/17 minutes, until the ‘Cakie’ no longer wobbles and is golden brown in colour.
- Distribute the Smarties, gently pushing each one to break the surface. Then leave the ‘Cakie’ to cool in the tin
- Once cool, eat it with the help of friends!
